Alisha Hughes “The Weight Watcher Friendly Table”
I am a working mom who is busy with three beautiful grade-school aged children. I am always on the hunt for healthy, easy, and tasty recipes, and I enjoy sharing the ones I love. I am doing Weight Watchers so the recipes I share are WW friendly and the Smart Points values and serving sizes are included with my recipes for others who may also be tracking points. I meal plan because it helps me stay on track and I have found that when I take a couple of hours at the beginning of each week to meal plan and grocery shop, the rest of my week goes so much smoother and is much less stressful. Cheaper too, since we aren’t eating out all the time. I hope my recipes, meal plans, and lists will save you time, alleviate stress, make you more efficient, and help you to enjoy cooking more. My kitchen shelf is filled with cookbooks from paleo, low carb, gluten free, kid friendly, low budget, seasonal and good ole’ Better homes and Gardens. My cooking has changed drastically in the 12 years since marrying my amazing husband and then even more with the addition of my three beautiful daughters.
Then three years ago came the biggest change of all, finding out I was gluten intolerant with a soy allergy on the side. Talk about change! We went from being a comfort food eating, bread making, cereal eating family to having to read labels on everything just to figure out what I could eat.
My journey has been a long one and I spent a lot of time not meal planning or cooking. It was just too overwhelming. My hope in sharing my weekly meal plans and recipe ideas with you is to take away some of the overwhelmed feeling you may have in meal planning and cooking.
Ever since I was a little girl, dinner time around the family table has always been a highlight of my day. I want to encourage you to take the time to meal plan so that you and your family can make memories around your Gluten Free Table!
