My sister, Brooke, gave me this recipe and I make it for new people all the time… because, I mean- how could you not?! (you will understand it’s addiction after your first taste)
Now for all of you who “claim” to not like avocado or guacamole, do not – i repeat- do not skip this recipe because of your past experiences with avocado. Let this recipe REDEEM this so healthy and yummy green (almost wrote vegetable- but checked wikipedia)- fruit. Learn something new everyday!
This has become our extended family get together “go-to”… A recipe that is requested by neighbors, friends and co-workers…
Looking for a unique appetizer to take to the next cook-out, potluck or family/friend get together?
This is it!
- 4-5 large ripened avocado (you don’t want it to be bright green and it needs to give a little when you push the skin- but not too much or it is overripe and bruised. If you cut it open and it has brown inside, it is overripe. I always buy 1 extra just in case I get a bad one.)
- 1 container of feta cheese
- 1/4 cup chopped and diced red onion
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 2 garlic cloves, minced
- 1 TB Oregano
- 1 TB Parsley
- Dice avocado
- Add Feta Cheese and red onion
- In a separate bowl, mix the olive oil, red wine vinegar, garlic, oregano and parsley
- Add liquid mixture to the avocado mixture
- Mix
- Serve with tortilla chips or Crackers
- Fall in Love!
Avocado Salsa
*This makes enough for 6-8 adults. If you are making it for less than that, you may want to halve the recipe. Wouldn’t want you to waste it since the avocado’s turn brown so quickly!*

1. Dice the avocado
2. Add Feta Cheese and diced red onion
3. In a separate bowl, mix together the olive oil, red wine vinegar, minced garlic, oregano and parsley.
4. Add liquid mixture to the avocado and feta.
5. Mix.
6. Serve with Tortilla chips or crackers and FALL IN LOVE!
*note, avocado turns brown fairly quickly after being cut open. Make this right before you intend to eat it and chill until served. It will keep for about 3-4 hours before starting to turn brown.
