These homemade fish sticks are fabulous! If you have been coming to Meal Planning Mommies very long you can probably imagine what my kitchen is like. There is something new being made in my kitchen all the time. We do repeat recipes, but not very often, because I enjoy the challenge of trying to create new original recipes for the blog.
Every once in a while we get a win and I hit a recipe that everyone in my family of five likes. These are my “must repeat” recipes. Allow me to share with you why these baked homemade fish sticks are a “must repeat” recipe…
My husband: “For Fish, It’s Good.”
I mentioned before that I have been trying to get more seafood into our diet for all of its health benefits. Unfortunately, my husband has not developed an appreciation for fish yet. Fortunately, he is a good sport and always eats everything I make! When I asked him what he thought of the fish sticks, he said, “Well, for fish, it’s good”. In other words, “If you are going to make me eat fish I don’t mind eating it this way.” Compare this reaction to my son’s reaction…
My son: “You should make this more often.”

I just have to be honest. This is not a face I see at dinnertime very often. My youngest (a seven year old) is my picky eater and he rarely gets this excited about eating anything I make. He typically grunts his way to the dinner table and plops himself down out of obligation. For this reason, I was shocked to hear him say these coveted words, “Mom! You should make this more often!” (insert shock face)
I said, “REALLY? You like it? Well, then I will make it again! Hang on…” Feeling good about my victory moment I grabbed my camera… “Okay, smile”. 🙂 I had to get it on camera. He was happy to get his picture taken and even gave a thumbs up!
Who is this kid and what did he do with my picky eater? So, needless to say, we will be making this again.
Lemon Pepper Seasoning.
There are lots of different Lemon Pepper Seasonings on the market these days. As far as I know you could probably use just about any of them and have good results with this recipe. In case if you were wondering, we used this McCormick Lemon Pepper seasoning with ours:

Here is what you need:
1/2 cup dry bread crumbs
2 tablespoons grated Parmesan cheese
1 teaspoon lemon-pepper seasoning
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 cup flour
1 large egg
1 egg white
1-1/2 pound cod fillets
Cooking spray
Here is what you do:
Preheat oven to 400°F. In a shallow container mix bread crumbs, Parmesan cheese, paprika, lemon-pepper seasoning, and salt.
Put flour in a separate shallow container. In a third shallow container mix egg and white.
Cut cod fillets into cute little strips.
Dip fish in the flour, the egg mixture, and then in the bread crumb mixture.
Place fish sticks on a pan and spray with cooking spray. Flip the fish sticks and spray the tops with cooking spray.
Bake in oven for 11-13 minutes or until fish is fully cooked and slightly browned.
One serving is 4 ounces baked fish sticks. For us that was about 7 fish sticks, but that will change based on the size/weight of your fish sticks. (Loving my Weight Watcher scale this week!)
Makes 4 servings.
One serving is 4 ounces breaded and baked fish sticks.
5 Green, 4 Blue, and 4 Purple points per serving.
