Our family loves to eat at T.G.I.Friday’s. Who doesn’t right? Of all of the burgers I have had in my lifetime my all time favorite has to be T.G.I. Friday’s Jack Daniel’s burger. If you have never had their Jack Daniel’s burger you should try it sometime. My husband and I LOVE them. The other thing we love that you should definitely try at least one time in your life is their cheesy mashed potatoes. It’s almost weird how yummy they are. This recipe is a very close copy cat recipe, in my opinion. You are going to love this version of mashed potatoes and chicken.
I have posted this recipe, as it was written in The Everything Restaurant Recipes Cookbook. There are three things you will notice with this recipe:
1. It tells you to use mashed potatoes, as if you already had mashed potatoes lying around. Of course, this means you will have to make the mashed potatoes. For an easy, quick, way to make mashed potatoes using your microwave go here.
2. It tells you to cook the food on an iron skillet and to serve it on the iron skillet. This is how they cook and serve this dinner at T.G.I.Friday’s and I love it, but I do not have an iron skillet at home so I just made mine in my trusty old nonstick pan and served it on regular old plates. (not quite the same, but it did the job)
3. It is only made for two servings, so you may need to add more chicken, potatoes, etc. for however many are in your family.
Here is what you will need to make your Sizzling Chicken and Cheese Potatoes:
Ingredients for Sizzling Chicken and Cheesy Potatoes:
2 (4 oz.) chicken breasts
2 Tbs. chopped garlic
2 Tbs. chopped parsley
1 tsp. crushed red chilies
1/4 tsp. black pepper
1/4 tsp. salt
4 divided Tbs. olive oil
1 julienned green pepper
1 julienned red pepper
1 julienned yellow onion
4 cups cooked mashed potatoes
1/2 cup shredded Chihuahua white cheese
2 slices American cheese
Here is how you make this deliciousness:
1. Pound the chicken breasts to an even thickness.
2. In a zip-loc bag, combine garlic, parsley, chilies, pepper, salt, and 2 tablespoons olive oil.
3. Place the chicken breasts in the marinade and refrigerate for 2-4 hours.
4. In a cast iron skillet over medium heat, heat remaining olive oil and saute the chicken breasts for 5 minutes per side until they reach a golden brown color. Remove from the pan.
5. Saute the peppers and onion for 2-3 minutes, until al dente. Remove from the skillet.
6. Heat a cast iron skillet on the burner until very hot. Place the mashed potatoes in the skillet, then add the cheeses, pepper, and onions.
7. Put the chicken on top of the potatoes. Cook until heated through. Serve from the hot skillet.
