Today’s recipes from The Everything Restaurant Recipes Cookbook are the Taco Bell Mexican Pizza and the yogurt parfait that you can get from McDonald’s. My awesome husband helped me put together our Mexican pizzas so that was fun! This is a great recipe to enlist the help of your kids too! The steps are easy and the outcome is yummy.
Ingredients for Mexican Pizza
1/2 pound ground beef
1/2 tsp. salt
1/4 tsp. dried minced onion
1/4 tsp. paprika
1-1/2 tsp. chili powder
2 Tbs. water
1 cup cooking oil
8 (6″) flour tortillas
1 (16 oz.) can refried beans
2/3 cup mild salsa
1/3 cup diced tomato
1 cup shredded Cheddar cheese
1 cup shredded Monterey Jack cheese
1/4 cup chopped green onion
1/4 cup sliced black olives (optional)
Instructions:
1. Preheat the oven to 400 degrees.
2. Cook the ground beef over medium heat for 7-10 minutes until brown, then drain.
3. Return meat to pan and add the salt, onion, paprika, chili powder, and water. Let mixture simmer over medium heat for 10 minutes, stirring often.
4. Heat the oil in a frying pan over medium-high heat.
5. When oil is hot, fry each tortilla for about 30-45 seconds per side and drain on paper towels. Tortillas should become golden brown.
6. Heat refried beans in the microwave for 1-2 minutes.
7. Place 4 tortillas on a baking sheet. For each pizza, spread 1/3 cup beans on a tortilla. Next add 1/3 cup meat, then tortilla.
8. Top each of the second tortillas with 2 tablespoons of salsa.
9. Divide the tomato, cheeses, green onion, and olives (optional) evenly on top of the salsa.
10. Bake for 10-12 minutes.

4 cups vanilla yogurt
2 (10 oz.) packages thawed frozen sliced sliced strawberries
1/3 cup thawed frozen blueberries
1/2 cup crunchy granola
Instructions:
1. Pour 1/2 cup of yogurt into a cup.
2. Top with 1/2 cup of strawberries.
3. Add 1 tablespoon of blueberries.
4. Pour 1/2 cup of yogurt over the fruit.
5. Top the yogurt with granola, and serve.
