Turkey Taco Salad
 
 
Serves: 5 servings
Ingredients
  • 1 lb. 99% fat-free ground turkey
  • 1 medium sweet red pepper, chopped
  • 1 medium sweet yellow pepper, chopped
  • ⅓ c. chopped onion
  • 1½ c. salsa
  • 2 tsp. chili powder
  • 1 tsp. ground cumin
  • 5-8 cups torn romaine
  • 10 tortilla chips
  • 5 tbsp. shredded cheddar cheese
Instructions
  1. In a large skillet, cook turkey, peppers, onion and garlic over medium heat about 6-8 minutes or until turkey is no longer pink and vegetables are tender, breaking up turkey into crumbles.
  2. Stir in salsa, chili powder and cumin; heat through. Divide romaine among five plates. Top with 1 cup of turkey mixture.
  3. Crush 2 tortilla chips over each bowl and sprinkle with 1 tablespoon cheese.
