I tried to create a balance between slow cooker, grilling out and super easy dinners.
My week has been crazy so I apologize for getting this meal plan up later than normal. My husband and I flew to Africa 2 weeks ago to care for our 4 year old daughter that we are in process of adopting. Since coming home I have suffered the effects of major jet lag!
I was completely blessed by a group of friends who organized some dinners for our family once we returned. Even though I love to meal plan and cook for my family, last week I desperately needed someone else to take charge! My idea of a “meal plan” last week consisted of peanut butter sandwiches and frozen pizzas.
How amazing it was to know home cooked food was being brought to us for several nights in a row.
Never underestimate the gift of a home cooked meal to a friend in a need. It serves up love in so many ways!
So now I am back on the ball and looking forward to doing some cooking this week.
Some little tid-bits about my week:
On Monday we have Breakfast for dinner scheduled because I will be gone for a dinner meeting and I gave my husband the choice of what he would like to make. He LOVES breakfast for dinner. Easy!
Thursday’s Crockpot Pulled BBQ chicken can feed a crowd so feel free to double or triple the batch and take it to a friend who could use a night off from cooking this week or take it to one of the many 4th of July potlucks coming up this weekend!
Last, but not least…You really need to check out the menu for the 4th of July: Backyard Burgers and Amazing Avocado Salsa. These are two of my favorite summertime recipes. These burgers are unlike any other. Made with 1 lb sausage and 1 lb hamburger they are flavorful and juicy! Then the Avocado Salsa which has now become a “must have” at all of our family gatherings. They are both a MUST try!
