Growing up my mom used to make what she called, “Cheese boats”. It was as simple as her adding bacon to our grilled cheese sandwiches, but there was something about calling them “cheese boats” that made them seem more special. They really weren’t boats at all, but we didn’t care. They tasted great and we loved it!
This is a sweet little spin-off from my mom’s old “cheese boats”. By using Healthy Life light bread, Fat-free American cheese, thin and crispy turkey bacon, and Smart Balance Light butter spread, these delicious sandwiches are 5 Weight Watcher smart points each. I thought it would be fun to add some syrup to the turkey bacon, but it is not an essential ingredient to making these grilled cheese sandwiches. If you leave off the maple syrup it will just be 4 Weight Watcher smart points per sandwich!
Quick and easy lunch that your kids can help make.
Depending on how old your kids are, they may enjoy helping you make these. It’s fun for kids to see how easy it is to make grilled cheese sandwiches. Even more fun, though, is getting creative with your sandwiches. Show them how you can make turkey bacon taste sweet by coating it with syrup and then let them get creative. Maybe ask them, “What else could we add to grilled cheese sandwiches to make them better/different?” and then let them try it.

Here is what you will need:
8 slices Healthy Life bread
4 slices fat-free American cheese
1 tablespoon maple syrup
6 slices Butterball Everyday Thin and Crispy turkey bacon
2 tablespoons Smart Balance Light Butter spread
Here is what you do:
Coat both sides of the bacon with syrup and cook on a large nonstick skillet until crisp, about 4 minutes on each side. Using a basting brush you can brush more syrup on the bacon as it cooks until the syrup is used up.
Meanwhile, spread a thin layer of the light butter spread on one side of each bread slice.
Once bacon is cooked, remove bacon to a plate and break, or tear, each bacon strip in half so you have 12 halves.
Scrape, or wipe off, the skillet with a spatula or wet paper towel.
Put down four pieces of bread on the skillet, butter side down. Top each with one slice of cheese and 1-1/2 pieces of turkey bacon. Top each with the extra bread slices, butter side up.
Once bottom slice of bread begins to become golden, after about 3-4 minutes, flip the sandwiches. Allow to cook an additional 3-4 minutes or until the the sandwich is lightly browned on both sides.
Serve warm.
Makes 4 sandwiches.
One sandwich is 5 Green, 5 Blue, and 5 Purple Points.

That looks tasty! I am in mourning since I learned that Kraft is discontinuing the fat-free singles due to low sales. 🙁 Velveeta slices are 1 SP, guess I can use them instead.

I was just going to tell you about the cheese being discontinued!! I am sick about it!! I loved that cheese. I thought it melted so well…especially on my eggs. 🙁 What’s a girl to do?!?!??! If Kraft only knew to advertise a bit harder….their sales would SKY ROCKET once our WW Community knew they were 0 SP’s per slice. I wonder if we can write to Kraft and appeal to them.
BTW…I did have hindsight because my local (out in the sticks) grocery store told me they were going to stop carrying them, because the Dairy Manager didn’t like them!!!! So I bought up 6 packs. I’m down to 1-1/2 and must get these back!!! I can’t wait to make your sandwich. I love maple bacon! YUMMMMM
