You are going to love these sandwiches!
Three reasons this is is a perfect recipe for when you have company come over or when you just want to treat your family to a great dinner:
- This recipe makes a lot (12 servings) so you can feed a crowd or eat leftovers the next day.
- Your house will smell AMAZING! Who doesn’t love walking into a home that smells delicious?
- These sandwiches are incredibly easy to prepare, giving you plenty of time to clean the house (if having company coming) while it cooks in the slow cooker.
If you could have smelled my house when I came home from work you would understand why I am raving about these sandwiches. The meat is tender and shreds apart with no problem and everything about the preparation of these just screams, EASY!
Lighten it up.
One serving (1/2 cup) serving of the beef mixture is 4 Smart Points without the Italian roll. Because different size rolls and brands can vary in smart points I have not added them in number of smart points. We used rolls that were 5 smart points per roll, so one sandwich was 9 smart points. Most rolls are between 3-6 smart points. If you want to use regular hamburger or hot dog buns you could do that as well. For some low smart point bun ideas that are just 2 smart points each you can go here. Another way to cut down on smart points would be to buy the big Italian rolls and cut them in half.

3 lb. bottom round roast beef
2 cups water
1 packet zesty Italian salad dressing mix
1 packet Au Jus gravy mix
1 medium onion, thinly sliced
1 can (4-7 oz.) chopped green chilies
12 Italian rolls (for additional smart points)
Here is what you do:
Cut beef in half lengthwise. Place in 4-qt. slow cooker.
Combine 2 cups water, Italian dressing mix, and Au Jus gravy mix. Pour over meat.
Top with onion and and green chilies.
Cover and cook on low for 9-11 hours or until meat is tender. Shred meat with forks.
Spoon 1/2 cup of the shredded meat mixture on each Italian roll.
Makes 12 servings. One serving is 4 Smart Points without the Italian roll.
