Pepperoni Pizza meets Italian Salad.
If you are craving the taste of a good pepperoni pizza, but aren’t loving the way it makes you feel afterwards, you should consider preparing this salad. My husband is a huge pepperoni pizza lover, but a not-so-much salad lover, so I thought I would give this recipe a try. It is inspired by a Taste of Home recipe I found in the Taste of Home 5 10 20 Cookbook. With ingredients like mozzarella cheese, black olives (which I left out of my husbands) and pepperoni it offers the taste of pizza with the light freshness of a salad.

If you regularly take salads to work for your lunches I have the perfect solution for carrying the salad into work and tossing the salad together, all without the salad getting soggy from the salad dressing. Check out the Pampered Chef Make-and-Take Mason Jar that has a compartment specifically for the dressing and comes with a fork and knife. Just shake the salad up in the jar to mix together all the ingredients together efficiently.

Which croutons to use on a pizza salad?
You could probably get away with just about any croutons with this salad but we used the Reese brand, Onion and Garlic Premium croutons.
Here is what you need:
12 oz. Italian or Romaine salad blend (about 8 cups)
1 c. (4 ounces) shredded park-skim mozzarella cheese
2 oz. (about 24 slices) pepperoni
2 Tbsp. sliced black olives
1/2 c. Fat-free Italian salad dressing
1 cup onion and garlic seasoned salad croutons
optional: Sliced red onion
Here is what you do:
Stack the pepperoni and cut the slices of pepperoni into little squares or strips. (This step is optional. I like to do this to ensure that I get a little bit of pepperoni with each bite, but that’s just me.)
In a large bowl mix the salad blend, cheese, pepperoni, black olives, and croutons. (and red onion, if you are using it)
Toss in the salad dressing. Serve immediately.
Makes 6 servings.
