Okay, enough about cameras… let’s talk about a really DELICIOUS recipe you are going to LOVE!
This stuff was awesome! The Jennie-O Italian turkey meatballs in this recipe are fantastic and pack lots of delicious flavor into this hearty, satisfying soup! So glad I gave these meatballs a try. You get eight generous 1-1/2 cup servings out of this recipe, and one serving is just 6 Weight Watchers Smart Points, 5 WW FreeStyle Smart Points, even with a full bag of meatballs! I ate this soup three days in a row and never got tired of it. I hope you can say the same!

Cuisinart PrepExpress Slicer, Shredder, and Spiralizer
Our electric Cuisinart Slicer, Shredder, and Spiralizer helped me chop up the onions and crinkle cut the carrots for this soup in less than a minute! Just put the vegetables in the little chute on top and press down with the white pusher you see pictured below…
There is a special blade for crinkle cutting and another blade for slicing. I used both of them, and it was super easy and fast! Here’s how the veggies looked when I was done…
Instant Pot 7-in-1 Multi-Use Programmable Pressure Cooker
The other tool I used for this was a 7-in-1 Instant Pot that lets you begin the recipe by sautéing the vegetables and then switching settings to pressure cook or slow cook the soup. (You could also prepare and cook this soup in a large saucepan on a stove top.)
Are you ready to try this delicious soup?
Here is what you need:
Cooking spray
1 onion, chopped
3-4 carrots, sliced or chopped
1 cup green beans, cut
2 minced garlic cloves
1 (24 ounce) package Jennie-O Italian Style Turkey Meatballs
2 (14.5 ounce) cans beef or vegetable broth (I actually used one of each because we already had it in our pantry)
2 (14.5 ounce) diced or Italian stewed tomatoes (I used one can of each just because it was what we had on hand)
1-1/2 cups frozen corn
1 teaspoon oregano
1 teaspoon parsley
1/2 teaspoon basil
Here is what you do:
Spray large saucepan or instant pot with cooking spray.
Add onions, carrots, green beans, and garlic and cook over medium heat 2-3 minutes.
Mix in remaining ingredients.
If cooking on a stove-top, cover and cook over medium-low heat for 20 minutes, or until meatballs are heated through.
-OR-
If using an instant pot, press the “soup” button and cook on high pressure for 15 minutes. Vent to release pressure once cooked.
-OR-
Cook in a slow cooker for 5-6 hours on LOW.
Makes 8 servings.
One serving is 1-1/2 cups soup.
One serving is 6 Green, 5 Blue, and 5 Purple points.

Ingredients

Hello so you said in the email introducing this meal plan that all the points have been updated to freestyle points and that we would know because it would say freestyle points. I do not see where it says that, it still says smart points. Am I missing something? By the way I love all your recipes, thanks for doing this!

Oh dear! Thanks so much for pointing that out. I updated it now. This recipe is 5 WW FreeStyle Smart Points per 1-1/2 cup serving. It’s funny I didn’t get the updated SP on here, because I think I have checked and rechecked the Smart Points on this recipe like a dozen times by now. It just feels too good to be true for a hearty soup like this one to just be 5 SP, but it keeps showing up that way so it has to be true. 🙂 BTW, this recipe will be in our next ebook! 🙂 Thanks again!
