If you are gluten free then you know the excitement of finding a new brand of gluten free mix in the aisle of the grocery store that you frequent weekly. This time it was a new brand of chocolate cake mix, and I just happened to be in the market for a cake.
Fellow gluten free friends, let me introduce you to “Among Friends.”
So not only is this cake gluten and soy free, but it is also made with grains that are better for you: Brown rice and oats. Over the past 9 months I have been working my way through a strict grain free diet. The past few months I have started reintroducing some gluten free grains again, curious to see how my body would react. I have found that white rice flour, tapioca starch and sorghum do not digest well in my tummy! So I was thrilled to see this cake was free of all of those ingredients.
YAY! A chocolate cake that WON’T hurt my stomach?
Now granted, this is not completely grain free nor sugar free… so this is a “once in awhile treat” as cookie monster would say.
But we had a special birthday to celebrate and I don’t know about you, but we like to celebrate birthdays with cake!
My daughter, Ruby helped me out making the icing on this cake.
There is an icing recipe on the back that is AMAZING. Seriously, I didn’t think I could make a good chocolate icing before this recipe.
This recipe is a keeper and one I will make again and again.
We made a double layer cake. The only negative about this cake was that it was a little hard to get out of the pan without crumbling. Next time, I will grease the pans a lot better!
I wanted to make this cake a bit “adultish” but also kid friendly. So I opted to do a filling of half raspberry jam and half chocolate icing. It was AMAZING. Very, Very good choice.
This is now my “go to” cake for those special once in awhile occasions. I bought mine at Kroger for around $5.99, but it makes 2 9 inch cakes or 1 9×13 cake. All you need to add is milk (or dairy substitute), butter (or oil), eggs and water (maybe there was one more ingredient- I didn’t take a picture of the ingredient list- so don’t quote me on that!)
The texture was dense and moist.
It was decadent. My husband and kids (who are not gluten free) wanted more.
Confession: We did eat the leftovers for breakfast the next day.

As I said before, we made this cake for a very special birthday celebration.
We have 4 daughters, but as you notice in the picture, one is missing.
We have been in process of adopting our 4th daughter from the Congo for 3 years. She turned 4 last week and we had to celebrate. Had to mark the day with joy for her. We ate her favorite meal, chicken and bread for dinner. Then had this special cake for dessert. It was a night to remember and a night that we cannot wait to share with her someday when she is home.
