Still on my comfort food kick with this one. This Salisbury steak is cooked in a beefy gravy and served with cooked egg noodles. It’s your ultimate warm-me-up meal… which is perfect because the temperature finally dropped below 70°F here in Indiana this past weekend! 🙂

Have I mentioned lately that I love hearing from you guys? I do. I get comments, emails, and messages from you guys/gals on a regular basis now and I love that. I love that I get to do life with you all in our own little way.
Some of my all-time-favorite messages I get are the ones that mention the reactions of family members to the food you cook. It warms my heart every time I think about you preparing these recipes for your families and your husbands/kids/wives being pleased with what you are cooking. Not every recipe can be a home run in every home, and I get that, but it sure it sweet to hear your success stories with healthy eating and with feeding your families food they love.
Having said that, I’m thinking there are probably some guys out there who will love this recipe. Do you have a “steak and potatoes” kind of guy in your house? Let’s talk onions for a sec.
I won’t spend too much time on this, but let’s just say my onion was too big. If you have a big onion, maybe consider only using a half of it, unless you REALLY love onions. I love onions so it didn’t bother me, but I know for some people (like my husband) there is such a thing as “too much onion”, so I just wanted to put that out there. You be the judge, but now you can’t say I didn’t warn you. 😉
Once the onions are in check, this recipe is perfect!
Here is what you need:
1 cup egg noodles, uncooked
15 saltine crackers
1 egg white
1 small onion, chopped
1 tablespoon ketchup
2 teaspoons Worcestershire sauce
2 garlic cloves, minced
1/2 teaspoon pepper
1 pound 95% lean ground beef
Cooking spray
1 envelope Onion Soup Mix
1 tablespoon cornstarch
2 cups water
1 beef bouillon cube
1 tablespoon fresh parsley, chopped
Here is what you do:
Cook egg noodles according to the directions on the package.
Using a Ziploc bag and your hands, or a food processor, crush saltines crackers into crumbs.
FYI: This is a great step for kids. Anytime I start pounding food for a recipe my daughter wants to jump in and help… and who can blame her? It’s fun. Besides, look at these sweet little hands. (Thanks for your help, Keely!)
In a large bowl, combine the egg white, onion, crushed saltines, ketchup, pepper, and ground beef, using your hands to mix well.
Shape into five oval shaped patties. One patty will be about 1/2 cup of the beef mixture.
Spray a large skillet with cooking spray and cook patties over medium heat for 3 minutes on both sides. Transfer patties to a plate.
Whisk together the soup mix, cornstarch, water and bouillon cube in the skillet. Bring to a boil. Put patties back into the skillet with the sauce.
Reduce heat. Cover and cook at a low heat 5-7 minutes or until meat is fully cooked.
Sprinkle with parsley and serve with egg noodles.
Makes 5 servings.
One serving is 1 beef patty, 1/4 cup gravy and 1/3 cup egg noodles.
One serving is 5 Green, 5 Blue, and 5 Purple Points.
