About that cheese.
One of our readers noted in the comments that you can use Kraft fat-free shredded cheddar cheese and knock one serving down to just 1 WW FreeStyle Smart Point per serving! Here is what you need:
3 teaspoons Mrs. Dash Southwest Chipotle seasoning {affiliate link}
4 (4 ounce) boneless, skinless chicken breasts
1 tablespoon canola oil
1 (15 ounce) can black beans
1 cup frozen corn
1/2 cup Tostitos chunky salsa {affiliate link}
1/4 cup Reduced Fat Shredded Mexican cheese
Here is what you do:
Rub Mrs. Dash seasoning on both sides of the chicken.
Heat oil in a large nonstick skillet. Cook chicken in oil over medium heat for 4-6 minutes each side, or until the juices run clear. Transfer chicken to a plate.
While chicken is cooking drain and rinse the black beans.
Add beans, corn, and salsa to the pan and cook about 3-4 minutes.
Sprinkle one tablespoon cheese on the chicken and allow it to melt. If it does not melt you can microwave the chicken with the cheese on it for 15-30 seconds. Serve 1/2 cup of the bean mixture with 4 ounces chicken.
Makes 4 servings.
One serving is 3 ounces cooked chicken, 1/2 cup black bean mixture and 1 tablespoon cheese.

Southwest Blackened Chicken and Beans
Ingredients

For a similar meal for one, use the WW frozen Santa Fe Rice and Beans and one chicken breast. Another option for this to put it on a large bed of lettuce for a chicken taco salad.
