This is a “ONE-POT-WONDER” recipe. The kielbasa, veggies, and rice all get cooked in one pot, and it smells amazing! My husband thought this was an interesting combination, but when he tried it he was surprised at how much he liked it. I hope you like it too!
Bring the smart points down with these variations:
One serving of this satisfying skillet dinner is 8 smart points. Most of that is in the sausage, which tastes amazing but isn’t particularly low in smart points. To knock this down to 7 smart points per serving you can cut the amount of sausage down from 13 oz. (which is about one package) to 7 oz. (one of two links in a normal size package).
Another option would be to cut out the rice, which would bring the points per serving down to 6 smart points.
Keep in mind if you do either of those things, you would have to rework the size of the servings, being sure to measure out 5 equal servings.
The surprise ingredient:
One of the ingredients in this recipe is a jar of roasted red peppers. This is typically in the aisle with the pickles. The jar will look something like this:
My recommendation is that you not leave this ingredient out if you can help it. It’s good.

Here is what you need to make this one-pot wonder:
1 Tbsp. canola oil
13 oz. turkey kielbasa
1 medium onion
2 garlic cloves, minced
1 can (14.5 oz.) fat-free chicken broth
1/2 cup water
3/4 tsp. Mrs. Dash Garlic & Herb seasoning blend
1 can (15 oz.) black beans
1/2 cup uncooked rice
1/2 cup frozen corn
1 jar (7 oz.) Roasted red peppers
Here is what you do:
In a large skillet, heat oil over medium-high heat. Add kielbasa and onion; cook and stir 4-6 minutes or until onion is tender. Add garlic; cook 1 minute longer.
Meanwhile, rinse and drain black beans. Measure out frozen corn and allow to begin to thaw. Slice kielbasa into thin slices.
Drain the red peppers onto a paper towel and pat dry. Chop the peppers.
Add broth, water, rice and seasoning blend to the onion and sausage. Cover the pan and allow to cook on medium heat for 15-20 minutes, or until rice is tender.
Stir in beans, corn, and peppers. Cook until heated through.
Makes 5 (1 cup) servings. One serving is 8 Green, 6 Blue, and 6 Purple Points.
Update: The kind of turkey sausage you use matters:
One of our readers pointed out that when she used the recipe builder this recipe pulled up 9 smart points per serving. As I looked into these ingredients a little more it looked like the turkey sausage might be the deciding factor in how many smart points this recipe would be. The smart points for Butterball, Hillshire, and Fit & Active (from Aldi) are all slightly different. My apologies on this one. I found the line on the app that said, “turkey kielbasa, uncooked” and used that one because I felt like it was generic and would apply to most, but I could be wrong about that. For instance, when I put in “Everyday Turkey sausage polska kielbasas” it pulls up 9 smart points per serving. A few brands that appear to be lower in smart points are the Fit & Active, Jennie-O Hardwood smoked, and Hillshire. I hope this helps.

Wow! This is an awesome recipe. It isn’t my “style” of eating as I’m kind of leery of new combinations of food. However, it was just a flavor explosion in my mouth. I did run this through WW’s Recipe Builder and it came up with 9 SP – but that is probably due to the specific brands that I used. This is going into the “loved it” stash of recipes.

Yes, I would make this again. I really liked it and my son had seconds (since he’s not on WW, he can do that.) I like all the items individually and they were good together. I did substitute brown rice and cooked it separately, because I didn’t read the recipe all the way through. Put it in with everything else for the last pat of the cooking time.
