If you like Girl Scouts Thin Mint cookies you are going to love this dessert idea! This recipe makes a lot too, (like more than ten cups) so you get to share your deliciousness with everyone you know, blessing those you work with, live with, and do life with… just like my friend did when she shared this with me! 🙂
One of my church friends made this yummy dessert around Christmas time and she put some in Christmas tins as presents. We were on the receiving end of one of those Christmas tins! (Thank you Becky!) It was so good that I asked for the recipe and made a huge batch myself. If you like chocolate with mint cookies and candies you will love this!
- 5 cups Rice Chex cereal
- 1 1/2 C. semi-sweet or milk chocolate chips
- 12 Thin Mint cookies, finely crushed
- 1/4 C. powdered sugar
- (instructions below)
- 5 C. Rice Chex cereal
- 1 1/2 C. Minty (green) Melts from Wilton
- 3/4 C. powdered sugar
- (instructions below)
- To make the thin mint chocolate pieces, use 5 cups Rice Chex cereal
- 1 1/2 C. semi-sweet or milk chocolate chips
- 12 Thin Mint cookies, finely crushed (or Keebler grasshopper cookies)
- 1/4 C. powdered sugar
- To make the Green Pieces, use 5 C. Rice Chex cereal
- 1 1/2 C. Minty (green) Melts from WIlton
- 3/4 C. powdered sugar
- Extra Thin Mints roughly chopped
- Chocolate Thin Mint pieces: Place cereal in a large bowl and set aside.
- In a small microwave proof bowl, melt chocolate and stir until smooth.
- Pour the melted chocolate over cereal and gently stir until coated.
- Add finely crushed cookies and stir again.
- Add powdered sugar and stir (we put the lid on our bowl and shake the bowl)
- Dump out onto a cookie sheet to let cool.
- Green Pieces: Place cereal in a large bowl and set aside.
- Melt green Melts/white chocolate, stir until smooth and stir in as much green dye as desired.
- Pour over cereal and stir until coated.
- Add powdered sugar and stir.
- Dump onto a cookie sheet and let cool.
- Mix the two colors together and add extra Thin Mints for decoration!
I had to make regular puppy chow for my husband and the two kids who don’t like mint, (because they are crazy…anyone who doesn’t like mint is crazy) 😉 In case if you have crazy people in your family too, here is the recipe for traditional puppy chow.
REGULAR PUPPY CHOW RECIPE
This one is for people who like peanut butter:
- 9 cups Rice Chexâ„¢, Corn Chexâ„¢ or Chocolate Chexâ„¢ cereal (or combination)
- 1 cup semisweet chocolate chips
- 1/2 cup peanut butter
- 1/4 cup butter or margarine
- 1 teaspoon vanilla
- 1 1/2 cups powdered sugar
In a large bowl, measure cereal; set aside.
In a microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Add powdered sugar. Shake in bag or in bowl with lid until all pieces are well coated with powdered sugar.
