What comes to your mind when you hear “comfort food”? Casseroles? Soups? Pot pies? How about fried chicken and mashed potatoes with gravy? When I hear “comfort food” I imagine warm, hearty food that creates a warm, nostalgic feeling when you eat it. We love our comfort food, especially in the Fall when the weather begins to chill. The problem is that traditional comfort foods are typically high in fat. Well, I have good news for you! This week’s meal plan includes six delicious comfort food recipes that are all slimmed down, so you can enjoy the warmth of comfort food without feeling the guilt afterward.
This week’s recipes come from 2 websites.
This week I am using three recipes from Kitchme and three recipes from Kate’s blog, Drizzle Me Skinny. You can read about Kate’s success story with weight loss here. Kate admits that she tried Weight Watchers several times before it really stuck. Of course, she is not alone. Many people can relate to weight coming off and back on again. I know I can. It is always inspiring to me to find someone who can stick with it and maintain weight loss over the long haul.
Here is a before and after picture of Kate from when she lost 53 pounds on Weight Watchers. . .
How are you doing?
I am not even going to lie. I am having an off week this week. I didn’t find time to make a meal plan this weekend and you know what they say about not planning? “If you fail to plan you are planning to fail.” (Thanks a lot, Benjamin Franklin!)
Here is what this week looked like for me:
Each day this week as soon as I left work I made a quick trip to the grocery store to pick up a few things that I forgot to get the day before. Because I made several trips throughout the week I bought more food than I normally would, bought several impulse “bad for you foods” and spent lots more money than if I had just made one trip at the beginning of the week. The other day I grabbed a frozen pizza and fried chicken because I needed something quick for dinner that night and the next. Along with it I grabbed a few extra convenience foods I thought the kids would like in their lunches. Yesterday we celebrated our son’s birthday by eating out. Today on the way home I grabbed some fried fish because it was on a great sale.
Everything tasted great, but I have been feeling ick all day today. (it’s catching up to me) I can feel my pants getting tighter and I just feel uncomfortable. I was telling my husband that I needed to get back on it (again) and he laughed and showed me this picture that popped up on his Facebook newsfeed:
It made me laugh out loud so I just had to share. You know it’s bad when your pants start talking to you. Am I right? 😉
I know I need to get a game plan going again. Perhaps you are there with me. If you are, you’re in for a real treat. . . I have a dinner meal plan for you that you can feel good about and carrying out the plan is as simple as printing off a grocery list, making one (yes, just one) trip to the grocery store, (Benjamin Franklin would be so proud!) and coming back to this post for the recipe each night.
Easy peasy!

I am having trouble accessing the recipe for the Parmesan chicken cutlets.. Any ideas??
Katie says
It appears that any of the recipes from KitchMe won’t come up.
Alisha Hughes says
Hmmm… I’m not sure. I am sorry it isn’t pulling up on your computer. When I click on the links it still takes me to the recipes so I am not sure why it isn’t working for you. :/

I couldn’t access the kitchme.com website from my iPad but I can from my desk top. Btw I’m new here and I am happy I found your site. I just started WW. Thanks.

Hmmm… very interesting. I will have to try getting to it from our iPad when I get home and see if it does the same thing for me. Thanks for bringing this to our attention.
Alisha Hughes says
Okay, I am home now and just tried to pull it up on our iPad and it worked. I am not sure why it wasn’t working on yours. I am sorry I can’t be more helpful.
