I have another simple two ingredient dinner idea for you. A while back when I made the “Unstuffed Cabbage soup” from the Simple Taste cookbook, “The SkinnyTaste Cookbook: Light on Calories, Big on Flavor”, I had a half of a head of cabbage leftover that I did not use. It was sitting on my counter-top and I had not come up with an idea of what to do with it yet when my daughter asked if she could eat it. I said, “Sure!” and I jokingly handed her the whole thing and told her just to chomp right down into it and to my surprise, she said “Okay”. She was ready to eat into a head of cabbage raw! Don’t get me wrong. I LOVE cabbage in a coleslaw but I have never seen a person just pick up a head of cabbage and sink their teeth into it. I mean, a rabbit. . . maybe. . . So, then I did what any good mother would do. I said, “Wait! Let me get my camera first.”
She took a bite of the cabbage and then smiled and gave me a thumbs up! Such a hoot. She makes me laugh.
Oh yes.
So, I posted this video on my personal Facebook page (like any good mother would) . . . It’s okay. I had her permission.
So, then my friend says in a comment, “Slice it thin, put on a greased cookie sheet brush with olive and season with your favorite stuff. 350 for 10 to 15 min. Yum.”
I didn’t have anything else planned with the cabbage so I decided to give it a try and I was surprised how much I loved it!
Seriously, you have to try this if you haven’t already. There are a TON of recipes with this similar idea. Apparently it was not a new idea. Who knew? Not me. But I am in the know now, and so are you. 🙂 I just followed the steps on here. I didn’t do anything fancy to mine. I just used olive oil with salt and pepper.
The steps are very simple.
- Cut up your cabbage.
2. Coat with olive oil and sprinkle with salt and pepper.
3. Bake it. 425°F for about 35 minutes.
As far as Weight Watcher points go on this one, I guess you would have to count the olive oil and that is it. Cabbage is zero points.
While the cabbage was cooking in the oven I sliced up some of Aldi’s Spinach and Feta chicken sausage and cooked in a frying pan until it was browned. This stuff is good. One link is 4 Weight Watcher smart points, but you might want to eat more than one link. I ate one link sliced but it was really good and I wished I had bought more so I could eat more. (just so you know) Luckily we had plenty of cabbage so I just doubled up on that.
Serve the baked cabbage and chicken sausage together.
