Straight from the Table for Two ebook!
I wanted to share a recipe straight from our newest 2-serving ebook to give you an idea of what the recipe pages look like. All of the recipes in the Table for Two ebook are Meal Planning Mommies recipes that have been tweaked and paired down to make two servings. So while the pictures may look familiar, the ingredient measurements are not.
In fact, some ingredients have been substituted from the originals. In the case of this recipe, the original Egg Salad Sandwich recipe on MPM suggested using tarter sauce. In the ebook we suggest light mayonnaise instead, since you will be using light mayonnaise in other recipes in the ebook. We didn’t want you to buy a whole container of tarter sauce unnecessarily. Yay for not wasting food! 🙂 Not wasting food is one of the main focuses with the Table for Two ebook, actually.
If you follow the ingredients and instructions on the recipe page (below), you will end up with two sandwiches, instead of five. Let’s do the math…or not…
This is such a simple recipe, with only a handful of ingredients, but it is a perfect example of a recipe that does not divide well.
Think fast: What’s 2 tablespoons divided by five?
I love math, but even I don’t want to figure that one out!
The math just doesn’t divide evenly. Which may not seem like a huge deal, but the more you have to do this, the more bothersome it becomes. It’s especially inconvenient when you are also trying to count WW Smart Points while dividing all of the measurements.

Okay, let’s get to this recipe. If you want to make five sandwiches, you can follow the recipe here. If you are wanting to make two sandwiches, follow the paired down version of the recipe below…
Here is what you need:
- 3 hard-boiled eggs
- 1 tablespoon Kraft light mayonnaise
- 1/2 tablespoon mustard
- 1/2 teaspoon sugar
- 4 slices light bread
Here is what you do:
1. Chop up the hard-boiled eggs.
2. Mix mayonnaise, mustard, and sugar into the eggs.
3. Scoop 1/3 cup egg salad mixture onto 2 slices of bread, and top each with another piece of bread. Cut sandwiches in half.

Ingredients

When I make egg sandwiches. Instead of cutting or chopping, I put the egg I. The palm of my hand and grate it on a cheese grater. Super quick and easy and easier to divide into sandwiches and looks pretty. I have no judgements if you do t try this that is okay____i just thought that it might be I teresting and easytotry.

This is my go-to easy egg salad recipe! I toast up a bagel thin and add the tiniest bit of cream cheese, then top with the egg salad. PERFECTION! So easy to whip up and have with veggies on the side for a speedy lunch.
