I love how easy it is to put together make these turkey and cheese pesto panini sandwiches! Going into this week I wanted to share several super simple recipes. I noticed that there was a very good response to the super easy Chicken and Gravy recipe a couple of weeks ago and it occurred to me that the idea of a recipe that is as easy as 1-2-3 is a winning recipe. The chicken and gravy slow cooker recipe was a delicious dinner that required 3 steps, 3 ingredients, and 3 minutes prep time for just 3 Weight Watcher smart points per serving! You can’t beat that.
Today’s recipe is a 5 star recipe. It requires a handful of ingredients and 5 simple steps for just 5 smart points per sandwich. You will love this turkey and cheese pesto sandwich! This panini can be grilled with a grill pan or panini press. I love my Pampered Chef grill pan and press. You can get yours here.
To make this sandwich gluten-free you can just swap out the bread for gluten-free bread. These are so quick to make you could do it on your lunch break! We ate ours with carrots.
Here is what you need:
2 T. fat-free mayonnaise
4 t. basil pesto
8 (1-oz.) thin slices sourdough bread or low calorie bread (such as Healthy Life, which is just 1 smart point per slice)
8 oz. Deli sliced turkey breast
4 slices reduced fat provolone cheese
1 tomato
Cooking Spray
Here is what you do:
- Preheat grill pan or panini press to medium heat. Spray with nonstick spray.
- Combine mayonnaise and pesto, stirring well.
(Where’s Waldo moment… can you find me in the picture above?) - Spread 1 tbsp. mayonnaise mixture on each of 4 bread slices;
top each slice with 2 ounces turkey,
½ ounce cheese,
and 2 tomato slices.
Top with remaining bread slices. - Place the sandwiches on the grill pan or panini press until browned, about 3 minutes. Spray the top bread slices with nonstick spray, flip and grill the other side.
Makes 4 sandwiches.
