This recipe is great as a burger sandwich with the salad on the side, or if you want to you could skip the bread and eat the burger on top of the salad. I ate my burger on the spinach salad and my family ate the burgers on a “sandwich skinny” bun (from Aldi). This recipe comes from the Weight Watchers Good Deal cookbook that has “more satisfying meals for less money”. At just 6 Weight Watcher Points+ per serving you can feel good about serving this healthy dinner option to your family!
This cookbook is great if you are trying to stick to a small grocery budget. Cheap or not, you won’t feel like you are skimping on this recipe.
Here is what you need:
1 pound lean ground pork
3 Tbsp. reduced-sodium soy sauce
2 Tbsp. minced red onion, plus 1/3 cup thinly sliced red onion
1 garlic clove, minced
1 tsp. grated lime zest
2 Tbsp. lime juice
1 Tbsp. minced peeled fresh ginger (I just used dried ground ginger)
2 tsp. canola oil
1 (10 oz.) bag spinach, tough stems removed
1 cucumber, peeled and sliced
Here is what you do:
Stir together pork, 2 Tbsp. soy sauce, minced red onion, garlic, and lime zest in medium bowl until well mixed. Form into 4 patties. (I made mine into 5 since we have 5 people in our family)
Spray large skillet with nonstick spray and set over medium heat. Add patties and cook, turning once, until instant-read thermometer inserted into side of burger registers 160°F, 8-10 minutes.
Meanwhile, whisk together lime juice, remaining 1 Tbsp. soy sauce, ginger, and oil in large bowl. Add spinach, cucumber, and sliced red onion and toss to coat.
Divide salad evenly among 4 plates; top with burgers.
