It really doesn’t get any easier than this. Three steps, three ingredients, and let the slow cooker do its work.

3 step, 3 ingredient slow cooker chicken and gravy

My whole family really enjoyed this slow cooker meal, and I think you will too. This recipe does make a lot, which is a good thing because it tastes even better the next day. The sauce thickens and gives it more of a creamier texture the next day.

I finally remembered to use the slow cooker liner bag with this recipe!

I got them at the beginning of the week so I could use them with each recipe and then I forgot to use them all week, until THIS recipe! I am not sure if it was me shredding the chicken with a fork that punctured a hole in the bag or what, but it did leak a little. Not a lot so it was still easy to clean, but I am not able to tell you for sure if I would suggest using them or not because that was my only experience with them. Have any of you had any luck with the Reynold’s slow cooker liners?

What to eat with your chicken and gravy.

This recipe goes great with toast, potatoes, or egg noodles.

The bread shown is “Healthy Life White bread” for 1 MyWW SP per slice, but most breads are about 2 MyWW SP per slice.
1 medium baked potato is 5 Green or Blue Points, or zero Purple MyWW points.
1/2 cup of egg noodles cooked is 3 Green, Blue or Purple MyWW points.
1/2 cup of brown rice cooked is also 3 Green or Blue or Points or zero purple points.

How we ate our chicken and gravy.

I cooked egg noodles and gave everyone the option of having their chicken and gravy with the noodles or I toasted them some toast. My kids loved this chicken and gravy and asked for leftovers the next day! They liked theirs with toast.

Are you ready for some super simple slow cooker chicken and gravy?

Here is what you need:

3 main ingredients!! Does it get any easier than that?!IMG_5414

6 boneless skinless chicken breasts (5-6 oz., about 2 lbs.)
2 (.87 oz.) packages chicken gravy mix (i.e. McCormick)
1 can (10 ¾ oz.) low-fat, low-sodium cream of chicken soup (i.e. Campbell’s Healthy Request)
2 cups water
fresh ground pepper to taste

Here is what you do:

  1. Place chicken in the slow cooker.
  2. In a bowl, mix together the dry gravy mix, soup, water and pepper with a whisk until the gravy is as smooth as you can get it.

  3. Pour the gravy mixture over the chicken. (I promise the chicken is under there somewhere)

  4. Cover and cook on low for about 4 hours, until the chicken registers 165° on an instant read meat thermometer stuck into the center of the breasts. (I shredded the chicken with two forks)

  5. Serve over mashed potatoes, egg noodles, brown rice or toast, if desired.

Makes 6 servings.
One serving is 4 oz. shredded chicken and 1/4 c. chicken gravy.
One serving is 4 Green, 2 Blue, and 2 Purple points.

    The chicken and gravy looks great! I’m going to give it a try! But, I’ll cut it in half. It’s just me. About the slow cooker liners…I’ve used them for a few years now. I love them and always have them on hand. You do have to be careful about punctures! But, I’ve lifted a slow cooker pot roast & veggies to another container. They’re great!

      Awesome Jan! Thanks for letting us know. You’re right! Good point. I forgot that when we were done eating it did make it was easier to lift the leftovers and transfer them to a bowl so I could store the leftovers in the refrigerator. 🙂

    Made this recipe and wow was it delish!!!!!!!!!! I truly never felt like I was eating a “diet meal” which is why I love MPM so much. I’m eating healthy without sacrificing taste or texture or anything else! I did add 1/4 to 1/2 cup of brown basmati rice to each serving. Ate it all week and never got tired of it. Another MPM success – thank you so much!

      Wow Paula!! That was so nice! Thank you for your kind words and your idea to use brown basmati rice. This particular recipe was from Simple Nourished Living, Martha McKinnon’s ecookbook. We do try to share recipes that we eat ourselves and you’re right… I don’t like to feel like I am eating diet food either. 🙂

    We loved the taste but it was too soupy for us . Next time I’ll add less water. I also added thawed peas the last hour because why not?? Hubby didn’t want me to to shred the chicken though it was easy to shred in the bowl. Comfort food without guilt

      I apologize for the confusion. It used to be 3 WW SP on the old WW Smartpoints program. It’s 2 WW SP with the FreeStyle program. I just deleted the spot where it still said 3 WW SP. thanks!

    Loved this one. So easy and tasty. I used egg noodles as the side but want to try making some “dumplings” in it next time. I know there’s some recipes out there using the heart healthy biscuit mix with skim milk. I imagine that would be amazing with these!
