It’s that time of year again. The time of sniffles and sneezes. It hit our home this week. Each of us took a turn fighting off the cold but, out of the five of us, I think I got it the worst. They say to feed a cold, and starve a flu. Rest assured, I’ve been doing a fine job of feeding my cold this week. It’s been long known that one of the best foods for the common cold is chicken noodle soup, but no matter how you are feeling you’ll be glad you whipped up a big batch of this chicken noodle soup.

Okay, let’s get to today’s soup…
Here is what you need:
1 tablespoon extra virgin olive oil
1 medium onion, chopped
3 celery ribs, sliced
3 medium carrots, sliced
6 garlic cloves, minced
12 cups fat-free chicken broth
1 pound boneless, skinless chicken breasts, cubed
2 tablespoons dried parsley flakes
4 teaspoons Italian seasoning
3-1/2 cups uncooked egg noodles
Salt and pepper, to taste
Here is what you do:
Heat oil in a large stockpot. Sauté onion, celery, and carrots in oil until onion is tender.
Add garlic and cook one minute longer.
Add the chicken broth, chicken, parsley, Italian seasoning and pepper. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. Chicken will cook in the broth.
Stir in noodles. Return to a boil and cook 7-9 more minutes, or until the noodles are soft.
Add salt and pepper, to taste.

Hi there! Do we know how many calories this soup is? Not just the WW points.
Alisha Hughes says
According to MyFitnessPal one serving is 172 calories. I have updated the recipe to include the nutrition facts. 🙂
Kayla says
Hi, is the chicken breast raw or already cooked before we put it in?
Alisha Hughes says
You could do either, but I started with raw and let it cook in the broth.
Heather says
Did you place the entire breast in and then shred it later?
Alisha Hughes says
Heather, I am so sorry. This recipe needed some serious love. I posted this recipe back in 2016, which means it was published before my husband started proof-reading all of my recipes. I have updated the recipe. To answer your question, I chopped the chicken first and let it cook in the broth. Thanks for bringing this recipe to my attention so I could fix it!

Hi, I put the nutrition info into my points calc and it comes out to 5
Alisha Hughes says
Hi Kathy, there is a calculator on the WW app that allows you to plug in the nutrition facts to get the number of Smart Points an individual food is worth. There are over 200 zero points foods now so WW has created a recipe builder that takes in account zero point foods in a recipe. When using the recipe builder, you enter in each ingredient and the number of servings the recipe makes. Then, the recipe builder calculates the number of Smart Points per serving, factoring in zero point foods. If you are tracking off of nutrition facts, rather than the recipe builder, your Smart Points total will be different than mine. It does take a little bit more time, but I use the recipe builder on here for our recipes to be consistent with what WW suggests doing.

Is 3 1/2 cups of noodle right
Cassi says
Looks delicious and I can’t wait to try it. Can this also be made in a crockpot?
Alisha Hughes says
I’m sure it could. I’m just not sure about the cooking time because of the noodles. I found this link that explains when to add pasta to the slow cooker: https://www.onedishdinners.com/2011/05/when-to-add-pasta-to-slow-cooker.html. Hope this helps. 😊

Thank you so very much! I’ll be making this next week for my lunches. I’ll let you know how it goes 😊
