This great freezer meal idea comes from Fabulously Frugal.
Here is what you will need:
4-8 chicken breasts
1/2 c. melted butter
1 c. seasoned bread crumbs
1 1/2 c. mozzarella cheese
1 15 oz. can stewed tomatoes or bottle of spaghetti sauce
1/2 c. Parmesan cheese
Here is what you do:
Take your boneless skinless chicken breasts and trim off any fat.
Mix the bread crumbs and Parmesan cheese together.
In a separate bowl melt some butter.
Dredge the chicken breasts through the butter and then roll in the bread crumb mixture.
Spread the spaghetti sauce along the bottom of a tin foil cake pan.
Place the chicken breasts on top and sprinkle with mozzarella cheese.
Cover with foil and freeze.
To cook frozen just preheat oven to 350 degrees and pop it in the oven for 65 minutes or until the chicken is no longer pink in the middle.
If thawed, cook it for 40 minutes at 350 degrees.
Serve over a bed of cooked spaghetti noodles and use extra sauce to cover noodles. While the Chicken Parmesan was cooking in the oven I cooked the spaghetti noodles and whipped up some cheddar garlic biscuits. I popped the biscuits in the oven while I put the the Chicken Parmesan on everyone’s plates. If you want to make cheddar garlic biscuits that taste like Red Lobster’s biscuits go here.
