If you have made crispy chicken before you are probably familiar with the old “dip the chicken in flour, then egg, then some kind of breading” trick.
This recipe takes that concept and makes it sweet by adding a little brown sugar to the flour mixture, and tangy, by using barbecue chips in place of traditional breading. We’re not using just any barbecue chips for this recipe though. No ma’am. For these crispy barbecue nuggets we are using PopChips! Have you heard of them? You have to try them!
1 oz. of Lays barbecue flavored potato chips is 5 WW smart points.
1 oz. of PopChips barbecue flavored potato chips is 4 WW Smart points.
Not a huge difference in smart points, but the PopChips taste so good, (and they are actually made better for you) and what’s left in the bag after eating this chicken will be a great snack later. If you want to use regular chips you certainly could. Just use 2 oz. of regular barbecue chips in place of the 40 PopChips. Because the number of smart points is not that much different between PopChips and regular chips it won’t change the smart points per serving in this recipe.
If you are eating gluten-free. . .
PopChips are naturally gluten-free, so no worries there. Just make sure to use a gluten-free alternative for the flour in the recipe and you will be all set.
Get the kids involved. . .
Kids love helping crush the potato chips and dip the chicken. This is an easy recipe that your kids will love to help make. . . and eat! 🙂
Here is what you need for these yummy nuggets:
- 4 ounces barbecue flavored PopChips potato chips (about 70 chips)
- 1/4 cup all purpose flour
- 2 tablespoons brown sugar
- 1 teaspoon ground mustard
- 1/2 teaspoon salt
- 3/4 teaspoon pepper
- 1/4 teaspoon cayenne pepper
- 2 eggs, lightly beaten
- 1-1/2 pounds boneless, skinless chicken breasts, cut into 2-3 inch pieces
- Cooking spray
Here is what you do:
Preheat oven to 425°F. Cover a cookie sheet with aluminum foil and spray with nonstick cooking spray.
Smash PopChips potato chips until coarsely crushed. There are lots of different ways to do this. I enlisted the help of my children. We used a Ziploc bag and they helped me by pounding the bag with their fists. When they decided that hurt we used the back of a spoon instead.
In a shallow container, mix flour, brown sugar, ground mustard, salt, pepper, and cayenne pepper.
Whisk eggs in a separate shallow container, and put the crushed PopChips in a third shallow container.
Dip chicken pieces into the flour mixture, then into the egg, and lastly, into the PopChips crumbs.
Spread a single layer of chicken on the pan and spray the top of the chicken with nonstick spray.
Bake in oven for 15 minutes or until the chicken is thoroughly cooked and the outside is crispy.
This recipe makes 6 servings.
One serving is 4 ounces chicken.
Each serving is worth 6 Green, 3 Blue, and 3 Purple points.
