I made this recipe the other day when we had a group of friends over and it was a big hit. It’s so simple to make and it tastes great.
All you need for this recipe is five simple ingredients: Ramen noodles, coleslaw mix, rotisserie chicken, green onion, and salad dressing.
All this recipe takes is 4 easy steps: Break, Shred, Chop, and Toss. (Break the noodles, shred the chicken, chop the green onions, and toss with the salad dressing)
You could literally have this whipped together in less than five minutes and it is only 3 WW FreeStyle SP per serving!!

Here is all you need:
1 package (3 oz.) Ramen noodles (any flavor)
1 rotisserie chicken, skin removed, shredded (about 2 cups shredded chicken)
1 package (16 oz.) coleslaw mix
6 green onions
1/2 cup reduced-fat Asian toasted sesame salad dressing (I used Kraft Lite when entering in the WW recipe builder)
Here is what you do:
Break the noodles from the ramen noodle package into small pieces, and discard the flavoring packet. (Do not cook noodles)
Shred chicken, without skin.
Chop green onions.
Mix chicken, coleslaw mix, green onion, and noodles.
Toss in the salad dressing and mix well.
This recipe makes 8 (1-1/4 cup loosely packed) servings. One serving is just 3 WW FreeStyle Smart Points.

I am having this for lunch today and it is really tasty! I do have a question about the servings/serving size, though – in the printed out format, it says there are 8 1.5cup servings. I followed the recipe exactly and barely got 5 1cup servings and by my WW recipe builder, each serving is 5sp – what did I do wrong? Still a very good 5sp lunch, though, thank you!

Hi Beth, Sorry it is taking me a while to get to your question. I needed to make the recipe again before I could confidently answer your question and I was at Disney when I got your comment, so I had to wait until I was home. Anyway, I was able to make it again last night and it made 10 cups for me this time, but I used 14 ounces of coleslaw mix instead of 16 ounces. I am not sure how you got 5 cups. Maybe it has to do with how loosely packing we are packing the measuring cup, or maybe you got less than 2 cups of chicken from your rotisserie chicken or something like that. Not sure. Either way, I am going to change this recipe to say that is makes, “eight 1-1/4 cup loosely packed servings” instead of “eight 1-1/2 cup servings”. Thanks for pointing that out so I could make the edits on this recipe.
