Our family is wrapping up the school year this week. As I prepare mentally to have the kids home all day each day, I am making lists of breakfasts, lunches, snacks, and dinners I will be feeding the kids. On the list of dinners is this recipe I am sharing with you today. It’s a classic kid-friendly recipe your whole family will love: CHICKEN FRIES!
I’ll admit it, I LOVE chicken nuggets. I always have. If there is a kid (or adult) in your life who loves chicken nuggets, consider making them these WW friendly chicken fries and see what they think, because you know what is even more fun than chicken nuggets? That’s right… Chicken fries! I hope you and your family enjoy these delicious crunchy, thinly cut strips of chicken as much as we did.
What do you serve with your chicken fries?
A lot of people associate chicken fries with french fries which, let’s face it, aren’t good for us. One of the perks of making your own chicken fries this way (besides the chicken being baked instead of fried) is that you are not limited to the sides that fast food restaurants offer.
Here are just a few MyWW friendly (and kid friendly) sides you can serve with your chicken fries:
- corn
- green beans
- mixed vegetables
- mandarin oranges
- cantaloupe
- watermelon
- carrots
- salad
- deviled eggs
- apple slices
- applesauce
- a strawberry, blueberry, and grape mix (this is my favorite mix of fruits)

Here is what you need:
1 pound boneless, skinless chicken breasts
1 cup panko breadcrumbs
1/3 cup grated Parmesan cheese
1 teaspoon garlic salt
1/4 teaspoon pepper
1/2 cup flour
2 eggs, beaten
Cooking spray
Here is what you do:
Preheat the oven to 400°F.
Cut chicken into thin strips, similar to the size of large french fries.
Mix panko breadcrumbs, Parmesan cheese, garlic salt, and pepper in a shallow dish. Put the flour in another shallow dish, and the beaten eggs in another.
Coat chicken fingers with flour, and then eggs, and then the Panko breading mixture.
Lay coated chicken fingers in a single layer on a cookie sheet or large stoneware. Spray chicken with cooking spray.
Bake chicken in preheated oven for 15-20 minutes, or until the outside is crispy and lightly browned.
Makes 4 servings.
One serving is 9 Green, 6 Blue, and 6 Purple points.
