Fish has never been easier than this! Three ingredients is all you need to make this delicious tilapia recipe. Serve it with steamed vegetables, and you can have dinner on the table in just 15 minutes for just 2 WW Freestyle Smart Points 3 Weight Watcher smart points per serving.
You may remember me mentioning in a post a while back that baked fish is a smart choice. . . but fried fish, not so much. The example I gave was in our post on smart fast food options when you are on Weight Watchers. In the post I compared fresh cod fillets (not fried) that you can buy in your grocery store freezing section (which was worth 2 0 smart points for 12 ounces) with the “3 Piece North Atlantic Cod” at Culvers (which is 51 Weight Watcher Smart Points)!!! Turns out the way you cook your fish can make a BIG difference. This recipe is so easy you can do it off of your memory. Each quarter pound (4 ounce) serving is just 3 smart points 2 WW Freestyle Smart Points, so you can feel good about this one! We just served ours with peas that I cooked in the microwave so this dinner literally took about 15 minutes to put together.
All you need for this recipe is some Italian bread crumbs, some Parmesan cheese, and some tilapia fish fillets. It just doesn’t get any easier than that!
Here is what you need:
1/2 cup Italian style Panko breadcrumbs
1/4 cup Parmesan cheese
1 lb. tilapia fillets
Here is what you do:
Preheat oven to 425°F.
In a shallow bowl, combine breadcrumbs and Parmesan cheese.
Rinse off the tilapia fillets. Coat damp tilapia fillets with the crumb mixture.
Place the coated fillets on a cooking sheet, or stone.
Spray the top of the coated fish with cooking spray.
Bake for 10-12 minutes.
There! Now wasn’t that easy!?
Makes 4 servings.
One serving is 1/4 of the fish (about 3.5 ounces cooked fish).
One serving is 3 Green, 2 Blue, and 2 Purple points.
