Fall is, and always has been, one of my favorite seasons. The weather is perfect, there’s pumpkin everywhere, it’s football season, and the comfort foods are the best. I wanted this next meal plan to feel right for this time of year so I came up with seven of my favorite comfort food recipes. In this meal plan, you will enjoy recipes like Meaty Vegetarian Chili, Beef and Barley soup, Creamy chicken and Minute Rice, Stromboli and BBQ Mini Meatloaves. Yum!
Slow Cooker Fall Favorites.
The Beef and Barley soup and Southwest Pulled Pork sandwiches are both slow cooker meals, and I just know you are going to love the wonderful smell of your house as they are cooking in the slow cooker throughout the day. Make sure you use pearled barley (rather than the quick cooking kind) so that the barley doesn’t get mushy.
Feed a crowd!
Some of these recipes make eight servings, so you will want to plan that into your week. The leftovers will make a great lunch the next day, or maybe it will give you the extra nudge to invite a friend to eat dinner with you that you have been meaning to catch up with.

Hughes family update…
Real quick update on what me and my family have been up to, and then we will get to the recipes this week.
If you are following me on Instagram you may have seen that my family has been in Florida this week, which is why I haven’t been posting anything lately. My husband planned our Disney vacation months and months ago. We decided to wait until the kids got home from school last Friday to tell them that we would be leaving for Disney the next morning. Then we waited until we were in Florida to tell them that a family we love would be spending the entire week with us. It has been great fun and amazing memories were made. (The last time we did a Disney vacation we did a 30-day countdown, which is also super fun… You can check out how that went here and here).
I just wanted to let you in on what I have been up to because I have been terrible about responding to emails this week and I have not thought anything about cooking recipes, let alone posting them. Thank you for your patience as I get around to my unanswered emails when we get back home. I appreciate you all.
