These grilled pork chops are seasoned with dark Sesame oil and a little salt and served with delicious honey glazed sautéed green beans and mushrooms… a perfect combination of sweet and salty.

My husband and I loved this dinner! At first, my kids shied away from the mushrooms and green beans. I had to encourage them to try the veggies so I let them know that most of the flavor is packed in the veggies (it’s true!). I told them to take a bit of pork chops with a bite of the veggies. My 10-year-old and 12-year-old were open to trying this, and they both liked it. My 8-year-old was okay with the pork chops but was not a fan of the texture of the mushrooms (this was not a shocker, honestly).
Serving sizes.
I used one half pound of green beans and 8 ounces mushrooms, but you can use more or less, according to what you love. The truth is the mushrooms soak up the flavor, and the green beans don’t quite as much, but both are important in making this a full meal. I think you will love this combination.

Here is what you need:
1/2 pound green beans, trimmed
2 teaspoons dark Sesame oil, divided
4 (4 ounce each) boneless pork chops, trimmed of fat
1/4 teaspoon salt
1 shallot, chopped
8 ounces mushrooms, sliced
2 tablespoons honey
2 tablespoons soy sauce
2 garlic cloves, minced
1 teaspoon dried oregano
1 thin sliced green onion, optional
1 tablespoon fresh snipped parsley, optional
Here is what you do:
Bring a pot of water to a boil; add green beans and cook until bright green and tender, about 5 minutes. Drain water.
Preheat a large skillet or grill pan to medium-high heat. Using a basting brush, coat the pan with 1/2 teaspoon Sesame oil.
Add pork to the pan and brush sesame oil on the top of the pork.
Sprinkle pork with salt. Allow to cook about 4 minutes on each side, or until fully cooked. Transfer pork to a plate.
In the same pan, add remaining 1 teaspoon sesame oil with shallots and allow to cook about 3 minutes, or until the shallots are softened.
Add mushrooms and cook about 6 minutes, or until the mushrooms are softened, scraping the bits from the bottom of the pan into the juices.
Mix in green beans, honey, soy sauce, garlic, and oregano and cook 2-3 more minutes.
Serve 3 ounces cooked pork chop with 1/4 of the green bean mixture. Spoon the remaining juices from the pan over each serving for additional flavor.
Top with green onion and parsley, if desired.
Makes 4 servings.
One serving is 1 pork chop and 1/4 of the green bean/mushroom mixture.
