This is one of the recipes we made the first time we went camping as a family. I had no idea what we were doing because the only camping I had ever done was at a kid’s camp that had a cafeteria. One of my friends who knew all about camping was eager to teach me all her camping tricks and this was one of the recipes she suggested. Without her help we would have been eating hotdogs over a campfire for breakfast, lunch and dinner. (no, really) It was nice to be able to eat a nice hearty meal that could be cooked over the campfire.
This week I am making this same recipe now as a freezer meal. I love the versatility of this meal, I love that it is easy to prepare and best of all when you use the aluminum pan it is a cinch to clean up afterward.
Here is what you will need:
3/4 pound fresh green beans, trimmed and halved
1/2 pound red potatoes, quartered
1 large onion, sliced
2 pounds smoked sausage, cut into 1 inch pieces (I did one pound, but most of the flavor comes from the sausage, so I really recommend using two pounds)
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon vegetable oil
2 teaspoons butter
1/3 cup water
Here is what to do:
On a large sheet of foil, place the green beans, red potatoes, onion, and sausage. Season with salt, pepper, and garlic powder. Sprinkle with oil, and top with butter.
Tightly seal foil around the ingredients, leaving only a small opening. Pour water into the opening, and seal.
If you make this as a freezer meal make sure you thaw it in the fridge first and then cook it for 40 minutes in a 400 degree oven. If you cook it over a campfire it will take approximately 30 minutes to cook, (more or less depending on how hot/big your fire is) and I would suggest stirring the ingredients around half way through.

- Preheat an outdoor grill for high heat.
- On a large sheet of foil, place the green beans, red potatoes, onion, and sausage. Season with salt, pepper, and garlic powder. Sprinkle with oil, and top with butter. Tightly seal foil around the ingredients, leaving only a small opening. Pour water into the opening, and seal.
- If grilling, Place foil packet on the prepared grill. Cook 20 to 30 minutes, turning once, until sausage is browned and vegetables are tender.
- If cooking at home, bake in a 400 degree oven for 40 minutes.

Hey there! Just wondering– if making in the oven should it cook 40 minutes with the tray covered in tinfoil? Or do I do any portion of the 40 minutes uncovered. TIA!
