Phyllo Cheeseburger Cups

Phyllo Cheeseburger Cups are a perfect snack, appetizer, lunch, or dinner!

These Phyllo Cheeseburger Cups take all the flavors you love in a cheeseburger and pack them into cute little cups. Depending on how many of these finger foods you eat, this recipe can be served as a snack, appetizer, lunch, or dinner!

Athens Mini Fillo Shells.

The Athens Mini Fillo Shells used in this recipe can be found in the frozen section of your grocery store. I love to use them because they are already baked, making them really easy to use in any recipe.

Serving Sizes and MyWW points.

You will get 30 Phyllo Cheeseburger Cups out of this recipe. We ate these for dinner, and my family all agreed that eating 5 of these was enough for one person for dinner. For our purposes, I am assuming that you are eating 5 of these, in which case this recipe would give you six servings. Five of these Phyllo Cheeseburger Cups are just 3 MyWW points on the blue and purple plans or 4 on the green plan! Isn’t that great?

Since the math doesn’t equal out to 1 phyllo cup being exactly 1 MyWW point, and because not everyone will be eating five of these, I am including this little list for reference:

MyWW Points according to how many Phyllo Cheeseburger Cups you eat…

1 Phyllo cup = 1 MyWW on green/blue/purple plans
2 Phyllo cups = 1 MyWW on blue/purple plans, and 2 MyWW on green plan
3 Phyllo cups = 2 MyWW on blue/purple plans, and 3 MyWW on green plan
4 Phyllo cups = 3 MyWW on green/blue/purple plans
5 Phyllo cups = 3 MyWW on blue/purple plans, and 4 MyWW on green plan
6 Phyllo cups = 4 MyWW on blue/purple plans, and 6 MyWW on green plan
7 Phyllo cups = 5 MyWW on blue/purple plans, and 6 MyWW on green plan
8 Phyllo cups = 5 MyWW on blue/purple plans, and 7 MyWW on green plan
9 Phyllo cups = 6 MyWW on blue/purple plans, and 8 MyWW on green plan
10 Phyllo cups = 7 MyWW on blue/purple plans, and 9 MyWW on green plan

So, the question is how many will you eat? 2? 3? 5? Make the recipe work for you and your appetite.

Here is what you need:

Cooking spray
1/4 cup chopped onion
1 pound 99% lean ground turkey
1/2 tablespoon garlic powder
1/2 teaspoon sugar
2 tablespoons ketchup
1 tablespoon mustard
2 tablespoons plain non-fat Greek yogurt
1 plum tomato, seeded and chopped
1/4 cup chopped dill pickles
30 mini fillo shells
1/2 cup reduced-fat shredded Colby and Monterey Jack cheese

Here is what you do:

Preheat oven to 350°F.

Spray a large sauté pan with cooking spray. Cook onions in pan 2-3 minutes.

Add turkey, garlic powder, and sugar and cook 3-4 minutes, breaking up the meat as it cooks.

Mix in ketchup, mustard, and Greek yogurt and cook until turkey is fully cooked, about 5-6 minutes.

Mix tomatoes and pickles in with the ground turkey mixture.

Put phyllo shells on a large baking sheet or stoneware. Scoop 1 tablespoon turkey mixture into each phyllo shell. Sprinkle each one with a little cheese.

Bake 4-6 minutes, or until the cheese is melted.

Makes 6 servings.
One serving is 5 filled Phyllo Cheeseburger Cups.
One serving is 4 Green, 3 Blue, and 3 Purple points.
