How about a fun little spin on your regular old cheeseburger? Salsa verde gives these burgers a little kick. For more kick add more sauce. For less kick use mild salsa verde and go light on the sauce. If you are one of my kids, of course, you immediately pull off the onion and lettuce as soon as you get to the table. 🙂 Choose your battles, I guess. You may even want to have ketchup on the table for the kids, just in case. Hope you enjoy this one.
Here is what you will need:
1 lb. ground lean beef (7% far or less)
1/2 cup fat-free salsa verde
1 1/2 tsp. chili powder
1/2 tsp. salt
6 (1/2 oz.) slices thin sliced Swiss cheese
6 light English muffins, split
6 thin slices red onion (opt.)
12 slices tomato (opt.)
6 lettuce leaves (opt.)
Here is what you do:
Using hands, mix together the beef, 1/4 c. salsa, chili powder, and salt in a large bowl.
Heat up grill pan sprayed with nonstick spray. Cook patties on grill pan until bottom is cooked and flip, cooking other side. Allow to cook until inside is no longer pink. Put a slice of cheese on top of each patty and let melt, about 4 minutes.
While the patties are cooking, toast the English muffins or put them in a 400°F oven for 10 minutes.
Top English muffins with one burger, onion, tomato, lettuce and remaining 1/4 cup salsa.
