My favorite recipe as a child was (and still is) Meatloaf, as a matter of fact my mom still cooks this for my as my birthday meal. I just love it. Its warm and comforting, juicy and meaty. Need I say more???? Whats funny is my dad so call “hates” meatloaf. I say this in quotation marks because he complains about eating it but then always eats seconds or third helpings. So my Mom and I don’t believe him. Then if we ask him about it he says well its better this time than it was last time or some kind of excuse like that. He will not admit he like even venture to say really like this. DT on the other hand loves this meat loaf recipe.
I decided to cook this recipe in a muffin tin because it only takes about 30 minutes to cook, but you can surely use the regular loaf pan just cook it for about 1 hour. I now add Antipasto to this recipe to give it a bit more flare, but its really great without it also.

Ingredients:
1 lb ground beef
2 slices toast
2 eggs
1 tsp garlic powder
1 tsp Tabasco (optional)
1/4 cup picante sauce (use 1/2 cup if you don’t use antipasto)
1/4 cup antipasto
4 slices bacon
Step One: In a large bowl to the meat add a splash of Tabasco, and 2 eggs, Garlic powder, salt and black pepper (optional)
Step Two: Take your toast pieces and crumble them finely, then mix, the crumble the rest of the toast
Step Three: Add 1/4 cup (eye ball it) picante and antipasto
Step Four: Mix well, I always use my hand, but you can use a spoon if you so please. Lightly grease a muffin tin or loaf pan
Step Five: Score the meat into 4 equal parts, then take 1/3 of each meat part and place into muffin pan
Step Six: Cut 4 slices of bacon into 3rds and place a strip on each mini meatloaf
Step Seven: Bake @ 350 for about 30 minutes if using a loaf pan 50-60 minutes
I love to serve with peas, and potatoes.

Another fun family treat is the Chocolate Mug Cake

I just tried the easiest Chocolate cake ever. Made in the microwave in less than 5 minutes, how cool is that. And it is sooooo good. This could be dangerous! I have already made it two days in a row. First day I used toffee bits, it was good, but a little dry, but then the second day I used cut up pieces of Hershey’s Bliss and OMG it was so much better, with little chocolate treasures in every bite mmmm.
5 MINUTE CHOCOLATE MUG CAKE
4 tablespoons flour
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips
a small splash of vanilla essence
1 coffee mug
Step 1: Add dry ingredients to mug, and mix well
Step 2: Add the egg and mix thoroughly.
Step 3: Pour in the milk and oil and mix well.
Step 4: Add the chocolate chips (if using) and vanilla essence, and mix again.
Step 5: Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don’t be alarmed!
Step 6: Allow to cool a little, and tip out onto a plate if desired.
Last, but not least: EAT! (this can serve 2 if you want to feel slightly more virtuous).
And why is this the most dangerous cake recipe in the world? Because now we
are all only 5 minutes away from chocolate cake at any time of the day or
night!

You guys! I actually wrote out this post yesterday. I have to tell you that we made the mug cake after lunch yesterday because it was so easy and fast I just could not wait to make them. I had a friend over, my husband was here, and my son. I gave everyone a mug and I put the ingredients into everyone’s mug (one ingredient at a time) and let them do the mixing. Definitely a fun idea!! Everyone got to make their own cake. We loved it. I loved that I didn’t have to do all the work. 😉 My suggestion: Mixing little pieces of chocolate in it and serving with ice cream makes the cake so much better. We broke up Hershey’s bars because we didn’t have chocolate chips and I LOVED it. Don’t skip that part. 🙂 Hope your family loves it too.
