Today’s recipe is an easy one. After making fancy foods (that I absolutely loved) like Garlic Brown Sugar Salmon and Chicken Carbonara, I decided to balance the week with some simple no-fuss recipes like the Chili Cheese Dogs and today’s recipe, Turkey Jack Quesadillas! You can make these quesadillas in 10 minutes or less!
Five for Five!
With just 5 ingredients, you can enjoy this yummy dinner for just 5 WW FreeStyle Smart Points per serving! In fact, you could even just use four ingredients if you leave out the mushrooms. (My daughter and I loved the mushrooms on ours, but the three boys in the family did not…they are great either way.)
Simple sides that go great with these quesadillas.
Serve with some fresh fruit and veggies to round out the meal. Some simple sides to consider would be carrots, mini peppers, sliced apples, fruit salad, black beans, corn, or a side salad with your favorite dressing.
Here is what you need:
1/2 cup salsa
4 Olé Xtreme Wellness High Fiber Low Carb 8 inch Wraps or other 1 WW SP tortillas
24 slices thin sliced turkey slices
1/4 cup canned mushrooms, drained
3/4 cup reduced-fat shredded Pepper Jack cheese
Cooking spray
Here is what you do:
Scoop and spread 2 tablespoons salsa over each tortilla.
Top 1/2 of each tortilla with 6 slices of turkey each.
Place 1 tablespoon mushrooms over the turkey on each tortilla.
Sprinkle 3 tablespoons cheese over the turkey/mushrooms on each tortilla.
Fold tortilla over. Spray a large skillet with cooking spray and set over medium heat. Cook tortillas, one at a time, in the pan for approximately 3-4 minutes on each side, or until the tortillas are slightly browned and the cheese is melted.
Carefully, using a large spatula, transfer the quesadillas to a cutting board and use a pizza cutter to cut them into 4 triangles.
That’s it! Easy peasy, right?
Makes 4 servings.
One serving is 1 quesadilla (or 4 triangles once cut)
