By using light string cheese, ultra-thin sliced salami and ham, low point dough, and a little bit of vinaigrette you get the taste of an Italian sub for just 3 Weight Watchers FreeStyle Smart Points each!
Are you familiar with 2-ingredient dough?
Two-ingredient dough is a simple concept that Weight Watchers member went nuts over at the beginning of 2018. The dough was mostly used to make bagels that were low in Smart Points. Since then there have been MANY variations of the original thing, from pretzels to funnel cake bites. The variation recipes take the simple concept of mixing self-rising flour with non-fat Greek yogurt, and make it into something more flavorful, versatile, and fun! Tomorrow I will share a list of great recipes that use 2-ingredient dough. Today’s recipe will be on that list.
Not a fan of 2-ingredient dough?
My husband will tell you that by the time all of the ingredients in this recipe come together you cannot even tell that it is the 2-ingredient dough, and he is right. The people in our family who do not like 2-ingredient dough as a bagel did like this snack… because it is delicious. 🙂 If you really wanted to, though, you could make this recipe without rolling it up in dough and it would be super yummy still and way easy. Plus, if you leave out the dough it is gluten free and each one would be just 2 WW SP each!
Where this recipe came from.
I LOVE Jimmy Johns subs! Every time I go to Jimmy Johns I am prepared to get a turkey sub or a turkey sub lettuce wrap. The only problem is that every time I approach the Jimmy Johns doors there is this BIG picture of their Italian sub, also known as the “VITO” sandwich! (sigh) There is brief “should I, shouldn’t I” moment as I open the door.
Determined to come up with a recipe that gave the taste of an Italian sub without all of the points, I decided to get creative. I kept telling myself, “There has to be a way to make an Italian sub that’s not 21 Smart Points”. (A Vito sandwich at Jimmy Johns is 21 WW SP) After experimenting with several ideas that did not work, I finally landed on this one… Wrapping the meat and cheese of an Italian sub in dough and baking like breadsticks. By using less of each ingredient and controlling the kinds of ingredients you use you can keep the points down while enjoying something you love!

A great Italian sub has anywhere between 2-5 different kinds of meat, but in my opinion only two are necessary. I kept this recipe simple by using just salami and ham. You can use any kinds that you like, but here is what I am suggesting for this recipe…
For the salami, I used Hillshire Farms Ultra Thin Uncured Hard Salami…
A great ham to use is the Hillshire Farms Ultra Thin honey ham.
When I plugged ingredients into to the WW app, I used light string cheese. Any 1 Smart Point string cheese will work. Pictured below are a few examples of light string cheese that is just 1 WW SP each…
Are you ready to try a yummy snack?
Here is what you need:
1/2 cup non-fat plain Greek yogurt
1/2 self-rising flour
1 teaspoon garlic powder
Sprinkling of flour for when dough sticks
4 sticks light string cheese
8 slices Ultra thin-sliced deli ham (I used Hillshire Farms)
8 slices Ultra thin-sliced deli salami (I used Hillshire Farms)
1 tablespoon red wine vinegar
1 tablespoon extra virgin olive oil
1/2 teaspoon Italian seasoning
Here is what you do:
Preheat oven to 425°F.
In a medium bowl, combine Greek yogurt, self-rising flour, and garlic powder. On a clean counter or piece of parchment paper that has been dusted with flour, form dough into a ball. If dough is sticking to your hands you can put flour on your hands as well.
Using a pizza cutter, cut the dough in four equal parts. Cut each of those pieces in half leaving you with eight equal triangles of dough.
Roll (or pinch) each piece of dough into into long thin pieces that are about 8-10 inches long.
Cut each piece of string cheese in half length-wise. Wrap each string cheese half with one slice ham and one slice of salami.
Then wrap one dough piece around each meat-wrapped string cheese.
In a small bowl, mix together red wine vinegar, oil, and Italian seasoning. Using a basting brush, brush the vinaigrette on each Italian Sub breadstick.
Bake the Italian Sub breadsticks in the oven for 12-14 minutes, or until the dough is fully cooked and slightly browned.
ENJOY!
