Chicken Tortellini Soup

This Chicken and Tortellini Soup is a broth based soup that is similar to Chicken Noodle Soup, except the noodles are swapped out for hearty cheese tortellini. My kids loved this, but who doesn’t like tortellini, right? This is a perfect cold-weather, weeknight dinner since it is warm and filling and only takes 20 minutes to make!

Any vegetables that you would associate with a good chicken noodle soup can be used in this soup. I kept it simple by using carrots and celery, but you could also add chopped onion, leeks, spinach, peas, zucchini, and corn. Adding the parsley at the end is optional.

Another way to keep this soup simple is to use canned chicken. I just used the canned chicken I found at Aldi, but I would recommend Swanson brand if your store carries it. Many stores place canned chicken in the aisle with canned tuna and canned ham. If you are not a fan of canned meat, you can use chopped or shredded boneless, skinless chicken breasts that are cooked with the vegetables or in the broth.

Here is what you need:

Cooking spray
1 cup sliced carrots
2 celery stalks, sliced (about 1 cup)
2 garlic cloves, minced
4 cups chicken broth
1 (12.5 ounce) can chunk chicken breast
1 (9 ounce) package cheese tortellini
1 teaspoon poultry seasoning
2 teaspoons parsley, snipped (optional)
Salt and pepper, to taste

Here is what you do:

Spray a large stockpot with cooking spray and set over medium heat. Add carrots and celery to the stockpot and cook 5-6 minutes. Add garlic and cook an additional 30 seconds.

Cook carrots, celery, and garlic for a Tortellini Chicken soup

Add chicken broth, canned chicken, tortellini, and poultry seasoning and cook 15 minutes, or until the tortellini is tender. Mix in optional parsley and salt and pepper, to taste.

Delicious chicken and tortellini soup similar to chicken noodle soup.

Makes 6 servings.
One serving is one cup.

Ingredients
