Grown Up Grilled Cheese Sandwiches

These grown up grilled cheese sandwiches combine melted mozzarella cheese and creamy garlic and herb cheese wedges with a little kick from rotel tomatoes and green chilies. Just 6 WW FreeStyle SmartPoints per sandwich.

These fancy 5-minute grown up grilled cheese sandwiches are going to rock your world.

I have been trying to find the words to describe these grown-up grilled cheese sandwiches, and all I could think of was cheese sticks. You know when you bite into a mozzarella cheese stick, and the cheese stretches with gooey yumminess, and you’re like, “Oooo yeah!”? It feels like that. And it tastes like that too. Between the grilled, buttery bread and melted mozzarella cheese, something about the taste reminds me of mozzarella sticks…

… but with a tomatoey kick.

Seasoned diced tomatoes give these sandwiches a fresh and delicious punch of flavor that pairs perfectly with mozzarella cheese.

These grown up grilled cheese sandwiches combine melted mozzarella cheese and creamy garlic and herb cheese wedges with a little kick from rotel tomatoes and green chilies. Just 6 WW FreeStyle SmartPoints per sandwich.

And the cheese… YUM!

By combining the sliced mozzarella with the spreadable garlic and herb cheese wedges, the cheese is both creamy and s-t–r—e—t–c–h-y.

I just have to give a quick shout-out to my 13-year-old son, Preston, who helped me snap the picture above. I called him into the kitchen and explained the situation… “I want the readers to see how the cheese stretches. I can’t hold the camera because I need both of my hands to be able to pull apart the sandwich. Do you think you could just hold the camera here and take a few pictures until we get the angle right?”

He didn’t give me any grief when we had to adjust the exposure and take multiple pictures. He patiently helped me until we got a good shot and then went on back to his game. He’s a champ. Thanks, buddy!

Fast and fancy grilled cheese sandwiches.

You don’t need very many ingredients to make these sandwiches, and you don’t need much time either. In fact, I was able to whip up these sandwiches in just 15 minutes! ♥ I love a quick lunch recipe like this one, don’t you? ♥

Speaking of the ingredients, here is what I used…

Diced tomatoes with green chilies – I just used our generic Meijer brand because it was cheaper, but most stores carry “Rotel” so if there isn’t a generic brand in your store, look for that.

Sliced mozzarella – I used thin-sliced mozzarella and doubled up the cheese in these pictures, but it is not what I am recommending for this recipe. When I used the thin sliced cheese, the cheese was too thin in some places and then doubled up in other places. Instead, I am suggesting you use regular thickness part-skim mozzarella slices and just use 1 slice per sandwich, which will distribute the cheese more evenly.

Light bread – I used Aunt Millie’s Light Oatmeal bread, but you can use any light bread. We have a list of breads that are 1 WW SP per slice here.

Light mayonnaise – I always use Hellman’s light mayonnaise. Alternatively, you could use light butter or cooking spray. If you use cooking spray instead of the mayonnaise, the WW points will drop to 5 WW SP per sandwich.

Garlic and Herb cheese wedges – I know there are generic brands of the same thing, but I just love Laughing Cow cheese wedges, so that’s what I used. Besides adding a little garlic and herb flavor to the sandwiches, the Laughing Cow cheese adds a creaminess that I think you will love.

The griddle I used.

Alright, let’s get to this recipe!

Here is what you need:

Simple ingredients to make grown up grilled cheese sandwiches combine melted mozzarella cheese and creamy garlic and herb cheese wedges with a little kick from rotel tomatoes and green chilies. Just 6 WW FreeStyle SmartPoints per sandwich.

1 (10 ounce) can diced tomatoes with green chilies, squeezed and drained
1 teaspoon Italian seasoning
1 teaspoon sugar
1/2 teaspoon salt
4 Laughing Cow Garlic & Herb cheese wedges
8 slices light bread
4 part-skim mozzarella cheese slices
1/2 cup fresh spinach leaves
1/4 cup light mayonnaise

Here is what you do:

Preheat skillet or griddle to medium heat.

Meanwhile, in a medium bowl, mix diced tomatoes, Italian seasoning, sugar, and salt. Be sure to squeeze out any liquid from the tomatoes.

Spread 1 cheese wedge each on 4 slices bread.

Laughing Cow creamy garlic and herb cheese wedges are perfect for a grown up grilled cheese sandwich!

Top each of the 4 cheese-spread slices with 1/3 cup tomato mixture, 1 slice mozzarella cheese, 1 layer of spinach and another slice of bread.

Delicious grown up grilled cheese sandwiches: Laughing cow cheese, rotell, spinach, mozzarella cheese, and light bread - so good!

Spread 1/2 tablespoon light mayonnaise on the top of the top slice of bread. Place sandwich, mayonnaise side down, on preheated skillet or griddle. Spread 1/2 tablespoon light mayonnaise on the top slice of bread. Grill until the bottom is golden brown, about 2-3 minutes.

Using my new griddle to make to some yummy grown up fancy grilled cheese sandwiches.

Flip sandwiches and grill other side 2-3 minutes, or until golden brown. Slice in half and serve immediately.

Stetchy gooey melted mozzarella cheese make these grown up grilled cheese sandwiches delicious!

Makes 4 sandwiches.
One sandwich is 6 green, 6 blue, and 6 purple points.
