Middle Eastern Pita Salad with a hummus dressing - SO GOOD! Just 4 WW FreeStyle SP per 2 cup serving!

Question: Do you still have some hard-boiled eggs left over from Easter?

If you do, I have one more great salad to use them in. It’s a Middle Eastern Pita Salad that uses a hummus-based dressing and lots of yummy ingredients, including salad greens, tomatoes, pita chips, cucumber, red onion, and, of course, hard-boiled eggs.

What makes a great Middle Eastern Pita Salad?

Here’s a little snapshot of what makes a delicious Middle Eastern Pita salad…

What you need for a delicious Middle Eastern Pita Salad with a hummus dressing - SO GOOD! Just 4 WW FreeStyle SP per 2 cup serving!

  • Pita chips
  • Hummus dressing (ingredients are in the recipe)
  • Tomatoes
  • Red onion
  • Feta cheese
  • Cucumber
  • Hard-boiled eggs

About the hummus.

I just used classic hummus from Aldi (Little Salad Bar brand) when I made this salad, but any classic or traditional hummus will work.

About the pita chips.

The pita chips I used are the Athenos brand. These things are PERFECT. I just broke up some of the chips and added them to the salad. They are really crunchy so the texture is similar to adding small croutons to a salad. I used 16 chips, which was about 3/4 cup.

BONUS: If you are looking for a quick snack, these pita chips can be dipped in the leftover hummus.

Alrighty, let’s get to this Middle Eastern Pita Salad…

Here is what you need:

Ingredients used in the Meal Planning Mommies Middle Eastern Pita Salad - SO GOOD! Just 4 WW FreeStyle SP per 2 cup serving!

1/4 cup classic hummus
2 garlic cloves, minced
1 tablespoon extra virgin olive oil
1 teaspoon red wine vinegar
1 teaspoon lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground thyme
8 cups salad greens
16 Athenos original flavored baked pita chips, broken (approximately 3/4 cup)
2 hard-boiled eggs, chopped or sliced
1 cup cherry tomatoes, sliced
1/2 cup reduced calorie crumbled feta cheese
1/2 cucumber, chopped
1/4 cup chopped red onion

Here is what you do:

In a small bowl, combine hummus, garlic, oil, red wine vinegar, lemon juice, salt, pepper, and thyme.

In a large bowl, toss the remaining ingredients. Mix hummus mixture in with the salad.

Makes 4 servings.
One serving is 2 cups.
One serving is 5 Green, 4 Blue, and 4 Purple points.
